Mini Turkey Sliders Toped With Turkey Bacon and Peppers

Enjoy the game with this delicious mini turkey sliders topped with maple glazed turkey bacon and peppers.  Packed with lean protein and very satisfying healthy game day snacks. Perfect for pan cooking or on the grill, crowd pleaser.

Ingredients

1 pound ground turkey

1 egg

1 tablespoon Worchestershire sauce

1/2 teaspoon salt

1/2 teaspoon crushed black pepper

1/2 cup plain yogurt

1 tablespoon sugar-free ketchup

5 Jalapeno peppers sliced ( Seeds removed) Peppers are optional

1 large onion sliced

2 tablespoon sugar-free maple syrup

natural non-stick spray for cooking

Instructions

1.) Add 1 pound turkey meat to a bowl.  Add the Worcestershire sauce, ketchup, salt, pepper, 1 egg and mix well to combine.

2.) Shape the mini burgers in small portions that will fit on small whole wheat rolls.

3.) In one large skillet spray pan with nonstick spray and heat the pan on medium heat.

4.) Saute the peppers for 2-3 minutes.  Remove from the pan

5.) Saute the sliced onion for 2-3 minutes and remove from the pan

6.) Cook the turkey bacon in the pan brush each side of the bacon with a light coating of sugar-free maple syrup for flavor

7.) Remove the bacon from the pan and add the mini turkey sliders to cook through

8.) Make the sauce by adding 1/2 cup plain yogurt and sugar-free ketchup.  Mix well

9.) Assemble the mini turkey sliders by adding sliced onions to the bun, top with the turkey burger, add the maple glazed turkey bacon and peppers, spread the top of the bun with the yogurt sauce.  Enjoy!

Nuts are considered a superfood packed with nutrients, fiber, high in protein and heart-healthy fats.  Nuts can be toasted on a baking sheet in a 325 degree preheated oven.  Different nuts need slightly different baking times due to their size.  Almonds may take 20 to 25 minutes to toast, peanuts may take 15 – 20 minutes, soybeans 15- 20 minutes, pistachios 15-20, sesame seeds 15 minutes, walnuts 20 minutes. When toasting nuts it is a good idea to turn the pan halfway through the cooking process to ensure even toasting.

Toss out the heavy cream cheese and use plain greek yogurt instead.  Loose the fat and indulge in this tasty and healthy game day snack.  This dip is easy to make and can also be used as a condiment for fish and chicken dishes for added flavor.  Keep this dip in the refrigerator up to one week in a tightly sealed container.

Ingredients

16 ounces of cooked chopped, well-drained spinach

2 cups of plain greek yogurt

1 Package of Lipton vegetable dry soup mix or Lipton onion dry soup mix

Instructions

1.) Spinach can be purchased frozen.  Take the frozen spinach out of the package and place it in a glass bowl.  Microwave the spinach for 3 to 4 minutes.  Allow the spinach to cool before proceeding. Lay a clean kitchen cloth on the counter.  Place the spinach on the towel and wrap the spinach to squeeze out the excess water.

Cut each hard-boiled egg in half to separate the yolks from the whites.  Add the yolks to a mixing bowl. Add the yogurt, salt, pepper, Dijon mustard, and mix well with a blender to combine all ingredients well.

Make your own popcorn snacks.  Totally control the ingredients by cooking this recipe in heart-healthy oils and only adding a pinch of salt and using low-calorie spray butter for flavoring.

Instructions

There are three ways to make homemade popcorn.  Add two tablespoons of popcorn to a small paper bag.  Add one tablespoon of olive oil to the bag on top of the popcorn.  Fold the top of the paper bag four times to seal.  Leave room for the popcorn to expand during the cooking process.  Place the paper bag in the microwave and select the popcorn button to cook or cook the popcorn in the microwave for 2-3 minutes until the corn has finished popping.  Carefully opens the bag to allow the steam to escape and pour the popcorn into a bowl.  Spray with low-calorie butter spray and lightly season.   Save calories by using a hot air popcorn maker available in stores near you.
